Caper and Garlic Rack of LambTuesday, November 13, 2007
Last night for supper, I made rack of lamb for the first time - it was wonderful!
2 tbsp. capers
8 anchovies, chopped
3 garlic cloves, minced
1 tbsp olive oil
1 rack of lamb
Preheat the oven to 450*.
I mixed together the first five ingredients in a bowl:
...spread the mixture on the rack (I just put it in a huge Corningwear dish):
...and set it in the 450* oven for about 32 minutes. That cooked the lamb to medium-rare:
It was really nice!
