Red Grape and Pecan Chicken Salad

I love chicken salad, but you know...sometimes chicken salad can be...a little boring. This one is really nice!

One cooked chicken (I just get one of those rotisserie chickens from the grocery store)
1/2 c. mayonnaise
1 bunch red seedless grapes
3 handfuls pecan halves, chopped into smaller pieces
2 hearts of celery, chopped
salt and pepper to taste

Take the rotisserie chicken and remove the skin, then pull the meat off in bite-size pieces. If it's been in the refrigerator overnight, I'll microwave the meat for a little while just to make sure it's completely safe.

Add the mayonnaise (1/2 cup is usually perfect, but you might want to start out with a little less and add to see what makes the right consistency for you) and celery:

...add the grape halves and pecan pieces, mix and add salt & pepper to taste:

The grapes make it a little sweet and the celery and pecans give it a little crunch. It is *so* good!
