Favorite Pancakes - and Thanks, Bonney!Saturday, December 02, 2006
This week, I made my new (which is now my favorite) pancake recipe as a little breakfast treat for Av, who has been super-busy at his office this week. Usually he just heats up a biscuit or two for breakfast, but even though I am not usually a breakfast eater (and don't even like the smell of food in the morning) I wanted to treat him...*plus* sweet Bonney from New Hampshire sent me some lovely NH maple syrup, and I've been wanting to use it, so this timed out perfectly!
Ingredients (this makes about eight pancakes):
1 cup whole buttermilk
1 c. flour (I like White Lily)
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 medium egg
3 tbsp. butter, melted and cooled
a little olive oil for frying
First, I mixed up all the dry ingredients:
In a measuring cup, I added the buttermilk, added the melted/cooled butter, then the egg - and whisked well:
The wet ingredients were whisked into the dry - but not overmixed:
I added a bit of olive oil to my non-stick skillet on medium-high heat, and poured out three pancakes. They're ready to flip when they make large bubbles on top:
This is New Hampshire pure maple syrup, in a super-cute container. This was the *best maple syrup* Av or I have ever, ever had!! A zillion thanks to Bonney for sending me goodies from her home state!
The pancakes turned out really great, and the syrup just made them perfect. Yum!
