My 'Menna Cheese (Pimento Cheese)
I made my pimento cheese recipe the other day - it's great with crackers, on white bread (which...I know, but...it's best minus the crust & cut into triangles!), or on plain-old celery. Some people even put it on hamburgers - I haven't tried that, though! If you've only ever had that gloopy grocery store pimento cheese, you're in for a surprise and a big treat. This is *real* 'menna cheese!This recipe is enough to enjoy and to share with friends.
Ingredients:
0.75 lb. cheddar cheese
4 handfuls of pecan halves
2 jalapenos
small jar pimentos
mayonnaise (I like Duke's)
salt, pepper, Tabasco
First, I grated the cheese in my Cuisinart:

Then, I took four good handfuls of pecan halves and chopped them into pretty fine bits:


Next, I added the pecan and jalapeno to the cheese, then some pimento (I'm not big on pimento so I only use a little):

I use only enough mayonnaise to get the mixture to hold together (too little is a lot better than too much - I used four large spoonfuls). Once it's all mixed together, I tasted and added salt, pepper, and Tabasco.

It's great as a little snack with Lance crackers! Yum!
